Over the years, with the experience and knowledge gained, the quality of the flock improved, winning numerous awards for livestock in the Campo de Madrid fairs.

During the 1950s and 1960s, one of the farm buildings was used to create a cheese dairy that produced cheeses with a blend of cow and sheep milk of great quality that were well received in the markets of Valladolid and Madrid.

From 1965 to 1983, his son Ricardo continued the work of improving the selection of flock, automating the milking and improving the facilities.

The flock’s size increased to 400 mothers.

In 1983, the pens were moved to old chicken roost buildings on the farm, where new facilities for milking and milk storage were built. After some “hiccups” and crosses with other breeds, it was finally decided to work with the ASSAF breed, a great milk producer and a well-received breed suited to the conditions on the farm.

In 1997, Ricardo Miranda Ocaña (the grandson of Don Fernando and son of Ricardo) presented a project to the family with proposals to improve the farm’s flock, and in 1998 his brother Fernando carried out the project to install the artisanal cheese-making facility in the farm to process the milk from the farm’s sheep.

In 2005, the current sheep pen building was constructed, covering 1,750 m2 and increasing the flock to 750 mothers, meaning an average of 900 heads on the farm.

And lastly, in May 2017, the building work was carried out to transform the old farm warehouse building and turn it into the QUESERÍA ARTESANAL LAS CORTAS cheese dairy.
